Crème Fraiche
Tasting Notes
Look: Thick white, sometimes ivory cream colour, whipped and creamy folds
Touch: Wet and rich and velvety texture
Smell: Butterfat, sour cream and slight nuttiness
Taste: A mixture of sweet, slightly sour and tangy cream.
It is similar to whipped cream but not as sugary and not as acidic as sour cream. It is decadent and rich.
Lovers
Food: Fresh strawberries, plums, pears and a sprinkle of raw sugar or dribble on top of crepes and pancakes or add to a bowl of homemade granola… anything goes for Crème Fraiche.
Beverage: Champagne (Blanc de Blancs) or coffee.
Sbrinz
Tasting Notes
Look: Yellow, ivory and sometimes pale orange with a dry hard edge, rind-less
Touch: Extra hard paste
Smell: Spicy nuts with sweet undertone similar to candied apples or lemon cheesecake
Taste: Surprisingly creamy after the initial dryness, slight salt, caramel, soft pineapple
Lovers
Food: Most fruit, especially Mirabelle plums and bosc pear. It is often used for grating in recipes often on top of risotto that is served in a cheese drum.
Beverage: New Zealand Pinot Noir, Alsatian whites or a Port
