Tasting Notes

Look: Has an ivory, almost yellow paste and a stamped, oatmeal coloured rind

Touch: A bouncy soft interior

Smell: Wild honey, tropical fruit, pure butter

Taste: A creamy finish full of fresh cut grass, coconut meat, flowers and a luxuriant salt with a surprise smokiness on the finish

Lovers

Food: Fresh or dried figs, sugared nuts such as pecans and almonds and rustic crunchy breads

Beverages: New Zealand Pinot Noir, Cotes-du-Rhone or St. Joseph

Bastian Beaufort

The Man:

Bastian is known and loved by the young women of his town. Poetry, wine and the music of the night sky are all his specialties as he genuinely makes love to each moment in time.

The Cheese:

Beaufort is an AOC protected French Alp cheese, first dated back to the Romans.

The genuine versions are made from a single herd using the summer milk and must be cured in cellars for no less than 6 months.
